SO, WHAT IS COCONUT BUTTER?
Coconut butter is made using the flesh of the coconut - much in the same way you would make peanut butter from peanuts. Much like any nut butter, coconut butter is great drizzled over fruit or granola, added to smoothies or enjoyed straight from the jar, however, there are some differences as well. Coconut butter is not as creamy as nut butters and will become quite hard in cold temperatures. The flavour however is what makes it so sought after. Coconut butter contains coconut oil but they too are quite different. Coconut oil would be better suited for cooking where coconut butters are often used as a spread or an alternative to nut butters.

So what are the benefits of coconut oil and coconut? Take it away Chris!
Coconut oil is one of the best fats to cook with because it’s almost entirely saturated. In fact, coconut oil is more than 90% saturated fat. While this makes it the devil according to the so-called medical authorities, we know better. In addition to being a great fuel source for the body, coconut oil has some unique properties. It is a special type of saturated fat called medium chain triglyceride (MCT). Unlike other fats, MCT's do not require bile acids for digestion. This means they are easily absorbed in the upper part of the small intestine. Coconut oil is also rich in lauric acid, a fatty acid found in mother’s milk that is anti-fungal, anti-bacterial ad anti-viral. Coconut oil has 4g of SFA, 0.3g of MFA - Chris Kresser
Though you may not want to cook with your coconut butters - imagine the benefits of eating it raw, straight from the jar with natural coconut to keep your belly and your tastebuds happy.
